Overview
Puglia has two personalities. Inland, it is medieval and agricultural — stone walls, trulli cones, the smell of olive oil and the specific silence of old hill towns. On the coast, it is maritime and alive — fishing harbours, Adriatic light, restaurants where the catch of the morning is the only menu.
Essential Puglia moves between both. The first half of the week is spent in Conversano, the quiet hilltop town that opens the door to trulli country and the best food and wine of central Puglia. The second half shifts to Monopoli on the Adriatic — a working harbour town with a perfectly preserved centre and the best fish in the region.
