This short break is built around time in a masseria kitchen — a working farmhouse kitchen, not a demonstration stage — learning to make the things that Pugliese families have made for generations. Orecchiette, shaped by hand the way it has always been shaped. Focaccia barese, baked the way it is supposed to be baked. Dishes that depend entirely on the quality of the olive oil, the flour and the hands doing the work.
The rest of the break is Puglia at its own pace. We arrange everything around the culinary centrepiece. You cook, you eat, you return home and actually make it again.
